We're very proud to say we have one of the greatest chef with us at Madoljai. Not because of any fames, but because we believe in her strong passion in food.
Even though it's such a very rare occasion you'd see her out of the kitchen, you still get to know and feel her calm but amazingly creative personality via her food served right in front of you on the table.
Before launching her own unique concept restaurant, Mawan used to work in a very fine Vietnamese restaurant in Elwood called Dandelion where she got all the qualified skills, high standard of food, and-of course 'Chefs Connection'. After learning from one of the top restaurants in Melbourne, she decided to go for the next step. Being the head chef at Mama's Buoi, a hip and funky Vietnamese restaurant had allowed her to explore the history of Asian cuisine especially South East Asian. The more she studied about it, the more she interested in Thai cuisine. For her, Thai food and flavours are just infinite.
"Cooking Thai food is an endless, you won't get to think something like 'there is nothing new for Thai food' because there is always something that you haven't tried" - said Mawan
Like we already mentioned this to anyone that asked us about our chef, we think her food is art.
